The Eggz mix should be fluffed up inside the package before measuring a “loosely packed” quarter cup.  Similar to how you would fluff and measure flour for baking cakes, etc.

For an omelette: Whisk together 1/4 cup omelette mix with 6 to 8 TBS non-dairy creamer.  This will look like a pancake consistency. Pour the mixture in a preheated non-stick skillet that has been lightly greased .(this is very important.  If not greased it will stick).

For omelettes, cook until lightly browned on one side, flip to brown the other side and add fillings.  Fill half of 'omelette' with your favorite fillings such as hash browns, sauteed peppers & onions, mushrooms, etc. and fold the other half over top.

For scrambled eggs:  use a 2-serving portion of Eggz (32 grams), blended well with 1/4 cup of non-dairy creamer (again it will be a pancake consistency). Pour into a heated lightly greased non-stick skillet and cook for a minute or so as you would regular scrambled eggs and scramble until completely cooked, approximately 4-minutes.

“Maria’s gnocchi recipe”

  • 160 ml water
  • 1/2 teaspoon salt
  • 80 gr Cambrooke All Purpose Baking Mix
  • Extra "flour" (Baking Mix) as needed

Place the water in a small saucepan and bring to the boil.

Add the salt and then add the All Purpose Baking Mix and whisk constantly for a few minutes to remove any lumps.

The mixture should be very thick so that it becomes difficult to whisk.

Remove the mixture and turn onto a floured board to cool.

When it has cooled, take a small amount and knead it.  Use extra "flour" if the mixture is too sticky.  Roll it into an approx. 2cm thick sausage.  Cut into small pieces (approx. 2-3 cm long) If the gnocchi are to be used immediately, place on a "floured" tray and cook. The gnocchi freeze well, so if they are to be frozen for future use, place onto a "floured" tray and put in the freezer for approx. 1/2 hour.  This will allow the gnocchi to harden so that they won't stick together.  Put in a freezer bag and keep in the freezer until needed.

To cook gnocchi:

Add gnocchi to boiling salted water until they are cooked.  (As they cook they will float to the surface.) Top them with your favourite sauce and sprinkle with Cambrooke shredded cheese.

May be added to plain tomato sauce, or a creamy mushroom sauce or broccoli sauce etc.

Grated Cheese

We've also had another suggestion from Maria, who wrote:

Hi very excited.  I've just discovered how to make grated cheese and thought you might like to put it as a suggestion on your recipe page........just freeze the Cambrooke cheese and then "grind" it in a coffee grinder.  (I have one of those small ones we used to use prior to getting a coffee machine.). Presto...grated cheese.  Will let you know what I will do with it as it's a lot easier to use when making rissoles, etc.  Maria
